25g (1oz) butter
1thin slice cooked ham or bacon
1 fresh egg
sea salt and freshly ground pepperInstructions:
Heat the crepes on both sides, leave in the pan and butter it generously..
Crack the egg, taking care not to break the yolk, and slide onto the crepe, add slice cooked ham or bacon and season with salt and pepper
Cook gently until the egg white is milky in color and the cheese has melted, then fold each edge of the crepe towards the center, leaving the egg yolk exposed.
Add a small knob of butter and serve
