SHAKSHUKA


Ingredients (1 serving):

  • Crepini Egg Wraps (As many as you like)

  • 1-2 tbsp of Extra Virgin Olive Oil

  • 1/2 medium onion, diced

  • 1/2 red or green bell pepper (diced)

  • 3 garlic cloves, minced

  • 3 large eggs

  • Salt and pepper to taste

  • 1 small bunch of parsley

  • 2 cups of vine ripe tomatoes (diced)

  • 1-2 tbsp of crumbled feta cheese

Directions:

1. Heat olive oil in a medium sauté pan on medium heat.

2. Sautee peppers and onions for about 3 min.

3. Add in the garlic and cook for another 1.5-2 minutes.

4. Add tomatoes into the pan and let this simmer for 20 min until the sauce thickens.

5. Make 3 small indentations (place holders for the eggs) in the sauce mixture. Carefully crack an egg in each section.

6. Add the lid on top of the pan for 5-8 min until the eggs are fully cooked or slightly running (whatever your preference may be.

7. Garnish with crumbled feta and parsley. Use the Crepini to scoop up the eggs and sauce.
