6 small CrepiniⓇ Egg Wraps with (Cauliflower or Gluten-Free Grains)
1 tablespoon vegetable oil
1 small yellow onion, thinly sliced
1 jalapeño, seeded & minced
8 ounces leftover turkey, diced or torn
½ teaspoon ground cumin
¼ teaspoon chili powder
¼ teaspoon kosher salt
¼ teaspoon ground black pepper
¼ cup cranberry sauce or chutney
¼ cup cilantro, chopped
1 avocado, pitted & sliced or diced
- To a 12-inch non-stick skillet over medium-high heat, warm the oil.
- Add onion and jalapeño and cook until soft and translucent, 5-7 minutes.
- Add turkey, cumin, chili powder, salt, and black pepper. Cook until heated through, about 5 minutes.
- To serve, warm Crepinis in microwave for 15 seconds. Fill with the turkey mixture and top with cranberry chutney, cilantro, and avocado.
