2 large Crepini® Egg Wraps with (Cauliflower or Gluten-Free Grains)
1 cup cooked short grain rice
¼ cup spinach, blanched
¼ cup cooked scrambled eggs
½ ounce cured ham, sliced thin
½ Korean pickled radish cube, or thinly sliced cucumbers
Soy sauce, for serving
Prepared wasabi, for serving
- Lay the two Crepinis on a flat plate or a bamboo sushi roller (the sushi roller will make your roll tighter).
- Spread a thin layer of rice on the Crepini (this may be easier if the rice is slightly warm but not too hot).
- To the top ⅓ of the Crepini, add the spinach, eggs, ham, and veggies.
- Tightly roll the Crepini as you would a sushi roll. Cut into 1-inch rolls and serve with soy sauce and wasabi.
