Pork Egg Rolls

Servings: 12 



12 small Crepini® Egg Wraps with (Cauliflower, Sweet Potato or Gluten-Free Grains)
1 tablespoon vegetable oil
8 ounces ground pork
1 cup shredded cabbage
1 cup shredded carrots
2 teaspoons (2 cloves) garlic, minced
½ inch piece fresh ginger, peeled & minced
¾ teaspoon sesame seeds
¼ teaspoon kosher salt
⅛ teaspoon red pepper flakes


For Brushing

1 tablespoon vegetable oil


For Dipping Sauce

¼ cup coconut aminos
3 tablespoons rice wine vinegar
2 tablespoons coconut sugar
½ teaspoon arrowroot starch
1 teaspoon toasted sesame oil
1 teaspoon (1 clove) garlic, minced
1 teaspoon freshly grated ginger



    1. Make the dipping sauce: to a small saucepan add all ingredients. Whisk to combine.
    2. Place on a stove set to medium heat and bring to a boil, whisking frequently until sauce begins to thicken slightly, 2-3 minutes. Remove from heat and transfer to a bowl. Set aside to cool.
    3. In a 12-inch non-stick skillet placed on a stove set to medium heat, warm the oil.
    4. Add ground pork to pan. Cook until no longer pink, breaking the meat up into bite-size pieces as it cooks, 5-7 minutes.
    5. Add cabbage, carrots, garlic, ginger, sesame seeds, salt, and red pepper flakes to the pan and cook until vegetable are soft, 4-5 minutes. 
    6. Remove pan from heat. Set aside and let cool for 10 minutes.
    7. When ready for assembly, place 2 tablespoons filling in the center of a Crepini.
    8. Fold in the top and bottom of the wrap (about an inch on each side), then fold sides in, and roll like a burrito. 
    9. Place the seam side of the Crepini face down on a baking sheet lined with parchment paper (Note: you can use a toothpick to hold the roll in place if necessary). Repeat process with remaining Crepinis and filling.
    10. Instructions for oven: Preheat oven to 400°F. Brush rolls with oil and place in oven. Bake until crispy, about 8 minutes.
    11. Instructions for air fryer: Place rolls in an air fryer set to 400°F and bake until crispy, about 5 minutes.
    12. Serve warm with dipping sauce.
