Ingredients
For the Beet Hummus
- 2 Pancheesi Original Protein Pancakes
- 2 sheets nori
- 1 6z salmon filet, cooked
- 1/2 avocado, sliced
- 1/4 cup sliced cucumber
- 1 tsp toasted sesame seeds
- Yum Yum Sauce for serving
Directions
- Place nori flat on a work surface
- Warm the protein pancakes in the microwave for 15-20 seconds, just long enough to soften
- Place the protein pancake on top of the nori
- Divide the salmon in half and place onto one side of the protein pancake. Top with avocado, cucumber, and sesame seeds
- Starting at the side with the filling, roll the nori and pancake up tightly, ending on the other side
- To seal, brush the nori with a small amount of water
- Serve with yum yum sauce
