Creamy Crab Dip with Crepini Chips

Prep Time: 20 minutes

Cook Time: 25-30 minutes

Servings: 8-12

One (10-ounce) package frozen chopped spinach, defrosted
8 ounces cream cheese, room temperature
2 ounces (½ cup) shredded sharp cheddar cheese
¼ cup light mayonnaise
¼ cup light sour cream
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon Old Bay Seasoning
½ teaspoon kosher salt
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon ground black pepper
1 lb lump crab meat
2 ounces (½ cup) grated Parmesan cheese
Fresh veggies, for serving (optional)

For the Crepini Chips

24 small Crepini® Egg Wraps with (Cauliflower or Gluten- Free Grains)
Cooking Spray, as needed
½ teaspoon kosher salt
¼ teaspoon garlic powder
¼ teaspoon ground black pepper

    1. Preheat oven to 375°F.
    2. Make the chips: Cut Crepinis in half and then quarters, to make four triangles from each wrap.
    3. Arrange triangle pieces on a greased baking sheet in a single layer. Spray the top of chips lightly with cooking spray (you will need 3-4 baking sheets, or you can bake Crepini chips in batches). Sprinkle tops with salt, garlic powder, and black pepper.
    4. Place in oven and bake until Crepini chips are golden brown, 4-5 minutes.
    5. Remove pan from oven and let cool to room temperature. (Note: the chips will get crispier as they cool).
    6. Turn oven up to 400°F. Coat a shallow 1-quart baking dish or cast iron skillet with cooking spray and set aside.
    7. Place the spinach in a colander or fine-mesh strainer and, using your hands, squeeze out as much water as you can. Set aside.
    8. To a medium mixing bowl add cream cheese, cheddar cheese, mayonnaise, sour cream, mustard, Worcestershire sauce, Old Bay seasoning, salt, garlic powder, onion powder, and black pepper. Whisk or stir until smooth.
    9. Fold in the spinach and crab meat.
    10. Transfer the mixture to the prepared baking dish.
    11. Top with Parmesan cheese.
    12. Bake until bubbling and browned on top, 15-20 minutes.
    13. Let rest for 5 minutes then serve with Crepini chips and fresh veggies.
