Ingredients
For the Caramelized Onion Dip
3 medium yellow onions, peeled, halved & thinly sliced (using a mandolin helps)2 tablespoons unsalted butter
½ teaspoon kosher salt
¼ teaspoon ground black pepper
1 cup sour cream, room temperature
8 ounces cream cheese, room temperature
½ cup light mayonnaise
1 tablespoon chives, minced, plus more for topping
½ teaspoon onion powder
½ teaspoon Worcestershire sauce
For the Crepini Chips
24 small CrepiniⓇ Egg Wraps with (Cauliflower or Gluten-Free Grains)Cooking spray, as needed
½ teaspoon kosher salt
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
Directions
- Preheat oven to 375°F.
- Make the chips: Cut Crepinis in half and then in quarters, to make four triangles from each wrap.
- Arrange triangle pieces on a greased baking sheet in a single layer. Spray the top of chips lightly with cooking spray (you will need 3-4 baking sheets, or you can bake Crepini chips in batches). Sprinkle tops with salt, garlic powder, and black pepper.
- Place in oven and bake until Crepini chips are golden brown, 4-5 minutes.
- Remove pan from oven and let cool to room temperature. (Note: The chips will get crisper as they cool).
- Make the caramelized onion dip: to a large non-stick skillet, add onions, butter, salt, and black pepper. Place on a stove set to medium-low heat and cook, stirring frequently until the onions are golden and caramelized, 30-35 minutes.
- Transfer onions to a medium mixing bowl and set aside to cool for 10 minutes, then transfer to a cutting board and roughly chop them.
- To a large mixing bowl add chopped onions, sour cream, cream cheese, mayonnaise, chives, onion powder, and Worcestershire sauce. Stir to combine. Taste, and adjust seasoning as needed.
- Transfer onion dip to a serving bowl and top with fresh chives. Serve at room temperature with Crepini chips.
