Caramelized Onion Dip

Ingredients

 

For the Caramelized Onion Dip

3 medium yellow onions, peeled, halved & thinly sliced (using a mandolin helps)
2 tablespoons unsalted butter
½ teaspoon kosher salt
¼ teaspoon ground black pepper
1 cup sour cream, room temperature
8 ounces cream cheese, room temperature
½ cup light mayonnaise
1 tablespoon chives, minced, plus more for topping
½ teaspoon onion powder
½ teaspoon Worcestershire sauce

 

For the Crepini Chips

24 small CrepiniⓇ Egg Wraps with (Cauliflower or Gluten-Free Grains)
Cooking spray, as needed
½ teaspoon kosher salt
¼ teaspoon garlic powder
¼ teaspoon ground black pepper

 

Directions

  1. Preheat oven to 375°F. 
  2. Make the chips: Cut Crepinis in half and then in quarters, to make four triangles from each wrap.
  3. Arrange triangle pieces on a greased  baking sheet in a single layer. Spray the top of chips lightly with cooking spray (you will need 3-4 baking sheets, or you can bake Crepini chips in batches). Sprinkle tops with salt, garlic powder, and black pepper.
  4. Place in oven and bake until Crepini chips are golden brown, 4-5 minutes.
  5. Remove pan from oven and let cool to room temperature. (Note: The chips will get crisper as they cool).
  6. Make the caramelized onion dip: to a large non-stick skillet, add onions, butter, salt, and black pepper. Place on a stove set to medium-low heat and cook, stirring frequently until the onions are golden and caramelized, 30-35 minutes.
  7. Transfer onions to a medium mixing bowl and set aside to cool for 10 minutes, then transfer to a cutting board and roughly chop them.
  8. To a large mixing bowl add chopped onions, sour cream, cream cheese, mayonnaise, chives, onion powder, and Worcestershire sauce. Stir to combine. Taste, and adjust seasoning as needed.
  9. Transfer onion dip to a serving bowl and top with fresh chives. Serve at room temperature with Crepini chips.
