1 Large Crepini® Egg Wraps with Cauliflower
1 cup arugula
½ avocado, thinly sliced or diced
1 small ruby red grapefruit, segmented
2 tablespoons roasted pistachios, chopped
1 tablespoon fresh tarragon, chopped
2 tablespoons salad dressing of choice
1. Place Crepini® Egg Wrap on a plate.
2. Top with arugula, avocado, grapefruit, pistachios, and tarragon. Drizzle the top with your favorite salad dressing.
3. Roll into a wrap for a fresh and zesty lunch!
