Ingredients4 small CrepiniⓇ Egg Wraps with (Gluten-Free Grains or Cauliflower)
1 tablespoon unsalted butter
4 tablespoons creamy or crunchy peanut butter, divided
4 tablespoons cookie butter, divided
¼ cup mini semi-sweet chocolate chips, divided
¼ cup roasted peanuts, roughly chopped & divided
1 teaspoon cocoa powder, for finishing
- To a 12-inch nonstick skillet placed over medium heat, melt the butter. Continue cooking until butter is browned and nutty, 3-4 minutes. Reduce heat to low.
- Working quickly, place Crepini in browned butter. Cook 10 seconds per side. Repeat process with remaining Crepinis.
- Transfer Crepinis to plates. Spread 1 tablespoon peanut butter and 1 tablespoon cookie butter over the Crepini. Top with 1 tablespoon chocolate chips and a sprinkling of roasted peanuts, then fold in half.
- Dust with cocoa powder and top with remaining roasted peanuts. Serve immediately.
