As an immigrant from Ukraine by the way of France, Paula fell in love with the delicate taste and sturdy texture of the French crêpe. She created her own recipe from her childhood memories of blinis and her newer experience with the French version. She and her husband, Eric, thought people in the U.S. would love this delightful, very thin type of pancake which can be served with a wide variety of fillings, such as cheese, fruit, jams, or spreadable chocolate.
