Protein Salmon Sushi Wrap with Yum Yum Sauce

Ingredients 

For the Beet Hummus 

  • 2 Pancheesi Original Protein Pancakes
  • 2 sheets nori
  • 1 6z salmon filet, cooked
  • 1/2 avocado, sliced
  • 1/4 cup sliced cucumber
  • 1 tsp toasted sesame seeds
  • Yum Yum Sauce for serving

 Directions

  1. Place nori flat on a work surface
  2. Warm the protein pancakes in the  microwave for 15-20 seconds, just long enough to soften
  3. Place the protein pancake on top of the nori
  4. Divide the salmon in half and place onto one side of the protein pancake. Top with avocado, cucumber, and sesame seeds
  5. Starting at the side with the filling, roll the nori and pancake up tightly, ending on the other side
  6. To seal, brush the nori with a small amount of water
  7. Serve with yum yum sauce
